¼ c. water
4 Hy-Vee large eggs, beaten
1 c. Hy-Vee Italian panko bread crumbs
1 c. shredded sharp Cheddar cheese
½ tsp. Hy-Vee salt
½ tsp. Hy-Vee ground black pepper
Desired condiments, such as fry sauce, ketchup, or ranch; for serving

Directions

  1. Line a large rimmed baking pan with paper towels; set aside. Place broccoli and cauliflower florets and water into a medium microwave-safe bowl. Cover and microwave on HIGH 3 to 4 minutes or until fork tender. Drain; transfer to prepared baking pan and pat dry; cool 5 minutes.

  2. Meanwhile, stir together eggs, bread crumbs, cheese, salt, and pepper in another medium bowl; set aside.

  3. Place steamed broccoli and cauliflower and onions in a food processor or blender. Cover and pulse until mixture is finely chopped. Transfer to bread crumb mixture; stir until well combined.

  4. Remove paper towels from baking pan; line with parchment paper. Form vegetable mixture into 1-1/2-inch-long cylinder shapes using about 1/2 teaspoon for each. Place on prepared baking pan. Freeze 2 hours or until firm. 

  5. Preheat air fryer to 400 degrees according to manufacturer's directions. Lightly spray air fryer basking with nonstick spray. Working in batches, place tots in single layer in basket. Lightly spray tops of tots with nonstick spray. Air-fry 7 to 9 minutes or until golden, turning once halfway through. Serve with desired sauces for dipping.

    To bake, preheat oven to 400 degrees. Bake on a greased wire rack set on top of a large rimmed baking pan for 18 to 20 minutes, or until brown and crisp.
