Directions
Grill pineapple for 2 to 4 minutes or until golden and slightly charred, turning once halfway through. Remove pineapple from grill and keep warm.
Roll scoops of ice cream in coconut and/or macadamia nuts until coated. Place each scoop of coated ice cream in center of a pineapple slice. Drizzle with caramel sauce. Garnish with mint leaves, if desired. Serve immediately.
