Directions
Meanwhile, cook bacon in a large skillet over medium heat 10 minutes or until crisp, stirring occasionally. Remove bacon with a slotted spoon; drain on paper towels.
Add onions to bacon drippings in skillet. Cook over medium heat 7 minutes or until softened, stirring often.
Stir in celery, vinegar, olive oil, mustard, sugar, salt, and pepper. Remove from heat. Add cooked gnocchi to skillet; toss to coat. Add cooked bacon; toss to combine. Garnish with parsley, if desired.
