Baked Tortellini Florentine

All you need:

  • 1 (19 oz) pkg Hy-Vee Select cheese tortellini
  • 1/2 c. Hy-Vee light mayonnaise
  • 1/4 c. light Parmesan peppercorn ranch dressing
  • 1/2 (10 oz) box Hy-Vee frozen chopped spinach, thawed and well-drained
  • 2 tbsp diced pimientos
  • 2 tbsp Hy-Vee breadcrumbs
  • 2 tbsp Hy-Vee shredded Parmesan cheese

All you do:

  1. Prepare tortellini according to package directions. Drain well. Return to pot.
  2. Stir in mayonnaise, Parmesan ranch dressing, spinach and pimientos. Transfer to a lightly greased 2-quart casserole dish.
  3. Toss together breadcrumbs and Parmesan cheese. Sprinkle on top of tortellini mixture.
  4. Bake, uncovered, at 350 degrees for 15 minutes or until golden brown.
