1 medium yellow onion, chopped
2 (15-oz. each) cans Hy-Vee pumpkin
4 c. Hy-Vee vegetable stock
½ c. Hy-Vee heavy whipping cream
1 tbsp. agave nectar
1 tsp. That's Smart! garlic salt
Hy-Vee ground black pepper
Hy-Vee sour cream, for serving
Curry powder, for garnish
Italian parsley, for garnish

Directions

  1. Heat olive oil in a large saucepan over medium-high heat. Add onion and cook for 4 to 5 minutes or until softened. Stir in pumpkin, vegetable stock, cream, agave nectar, garlic salt, and pepper.

  2. Simmer mixture for 5 minutes or until heated through. If desired, cool soup slightly, transfer mixture to a blender, and blend until smooth. Serve in bowls topped with a swirl of sour cream, a dash of curry powder, and/or parsley sprig, if desired.
