Directions
Heat olive oil in a large saucepan over medium-high heat. Add onion and cook for 4 to 5 minutes or until softened. Stir in pumpkin, vegetable stock, cream, agave nectar, garlic salt, and pepper.
Simmer mixture for 5 minutes or until heated through. If desired, cool soup slightly, transfer mixture to a blender, and blend until smooth. Serve in bowls topped with a swirl of sour cream, a dash of curry powder, and/or parsley sprig, if desired.
