Directions
Arrange potatoes, cut side down, in a rimmed sheet pan. Top with fennel mixture. Roast for 23 to 28 minutes or until potatoes are fork-tender.
Meanwhile, place the parsley, butter and lemon zest in a large, heat-safe bowl. When potatoes are done, add potato mixture to parsley mixture in bowl. Sprinkle with lemon juice. Toss to coat. Transfer to serving bowl. Carefully squeeze roasted garlic out of peel before eating.
