Chicken nuggets are super easy and kid-friendly! Make your own delicious nuggets by marinating in pickle juice and cooking them in the air fryer.

Directions
Preheat an 8-qt. air fryer to 375 degrees according to manufacturer's instructions. Whisk together coconut flour, all-purpose flour, sugar, salt and pepper in a medium bowl. Whisk together egg and milk in another medium bowl.
Drain chicken; discard pickle juice. Dip chicken, one piece at a time, into egg mixture covering all sides. Immediately dip chicken into flour mix, and place a single layer of coated chicken into air fryer basket; coat with air fryer spray. Air-fry for 10 minutes, turning chicken over and coating with air fryer spray halfway through cooking.
Repeat with remaining chicken pieces until all the chicken is cooked through (165 degrees). Cool slightly before serving.
Serve with desired dipping sauces and garnish with fresh parsley, if desired.
