Almond Cream Cheese Cookies

½ c. Horizon butter, softened | ||
3 oz. Tofutti cream cheese | ||
1 ¼ c. granulated sugar, divided | ||
1 Sparboe egg | ||
½ tsp. almond extract | ||
2 c. Bob's Red Mill white flour | ||
½ tsp. baking powder | ||
1 tsp. cinnamon |
Directions
- In a large bowl, cream together butter, cream cheese and 1 cup sugar until light and fluffy. Beat in the egg and almond extract.
- Combine the flour and baking powder. Stir into the creamed mixture. Cover and chill 1 hour.
- Preheat oven to 375 degrees. Stir together remaining sugar and cinnamon. Form dough into 1 tbsp balls. Roll dough balls in cinnamon and sugar mixture. Place dough balls on an ungreased cookie sheet. Press balls down with the bottom of a drinking glass to flatten.
- Bake 7 to 9 minutes or until bottoms are lightly browned and cookies are firm. Remove from cookie sheets to cool on wire racks.
