1 (12 oz) pkg reduced-carb angel hair pasta, uncooked | ||
2 tbsp. Hy-Vee Select olive oil | ||
¾ c. julienned yellow onions | ||
¾ c. julienned carrots | ||
¾ c. small broccoli florets | ||
2 garlic cloves, minced | ||
¾ c. Hy-Vee chicken broth | ||
½ c. fresh basil, chopped | ||
¾ c. pea pods, julienned | ||
3 tbsp. Hy-Vee butter | ||
Hy-Vee salt and Hy-Vee pepper to taste | ||
¼ c. shredded Hy-Vee Parmesan cheese |
Directions
- Cook pasta according to package directions.
- Heat olive oil in large sauté pan. Sauté onions, carrots, broccoli and garlic over medium heat for 5 minutes.
- Add chicken broth and basil. Simmer 3 minutes.
- Add hot pasta, pea pods, butter, salt and pepper.
- Toss all ingredients together until well blended and heated through.
- Sprinkle with Parmesan cheese and serve.
