Apple Pecan Muffins

1 ¼ c. plus 1 tbsp packed Hy-Vee brown sugar, divided | ||
1 c. peeled, cored, chopped sweet apples | ||
¾ c. plus 1 tbsp Hy-Vee chopped pecans, divided |
Directions
- Preheat oven to 375 degrees. In a large bowl, sift together 1 1/2 cups flour, baking powder, baking soda, salt and 2 teaspoons apple pie spice.
- In a medium bowl, whisk together eggs, yogurt and 4 tbsp melted butter. Add 1 cup brown sugar and whisk to combine. Add to the dry ingredients and mix until just combined. Fold in apples and 1/2 cup pecans.
- Divide the batter among a greased 12-cup muffin tin, filling each about 2/3 full.
- In a small bowl, combine remaining flour, apple pie spice, butter, brown sugar, and pecans. Sprinkle about 1 tablespoon of the crumb mixture over the top of each muffin. Bake until inserted toothpick comes out clean, about 25 minutes.
