1 c. Anderson Erickson apple pie yogurt | ||
¼ c. Hy-Vee vegetable oil | ||
2 ½ c. Hy-Vee flour | ||
1 tsp. Hy-Vee baking powder | ||
½ tsp. Hy-Vee baking soda | ||
¼ tsp. Hy-Vee salt | ||
1 tsp. Hy-Vee ground cinnamon | ||
½ tsp. Hy-Vee ground ginger | ||
½ tsp. ground cardamom | ||
1 ½ c. Hy-Vee apple pie filling, divided | ||
¾ c. Hy-Vee whipped topping, thawed, divided |

Directions
- In a large bowl, stir together eggs, milk, yogurt and oil.
- In a medium bowl, stir together flour, baking powder, soda, salt, cinnamon, ginger and cardamom. Stir flour mixture into milk mixture until smooth.
- Heat a lightly oiled griddle over medium-high heat. Pour 1/4 cup batter onto griddle for each pancake. Cook until bubbles form in the cakes and bottoms are golden brown. Flip. Cook the other side until golden.
- To serve, top two pancakes with 1/4 cup apple pie filling and 2 tablespoons whipped topping.
