Apple Pie Preserves

Description
Make an easy homemade dessert by spooning these preserves into pastry to create apple turn overs, or spoon on top of waffles and pancakes for a tasty breakfast.

2 lbs. apples, peeled, cored and finely chopped (about 6 cups) | ||
2 c. Hy-Vee 100% apple juice | ||
1 tbsp. Hy-Vee lemon juice | ||
2 ¼ c. Hy-Vee granulated sugar, divided | ||
1 (1.75 oz) pkg powdered fruit pectin for less- or no-sugar-needed recipes | ||
1 ½ tsp. Hy-Vee ground cinnamon | ||
¼ tsp. ground nutmeg | ||
½ tsp. Hy-Vee butter |
Directions
- In a large saucepan or Dutch oven, combine apples, apple juice and lemon juice. Bring to boiling; reduce heat to medium and simmer about 12 minutes or until apples are soft.
- In a separate bowl, stir together 1/4 cup granulated sugar, fruit pectin, cinnamon and nutmeg; stir into apple mixture. Return to boiling. Stir in remaining sugar and butter. Return to boiling once again. Remove from heat. Ladle into sterilized jars, leaving 1/4-inch headspace. Process in boiling water bath for 10 minutes (after water has returned to full boil).
