1 ½ c. Hy-Vee organic raisin bran cereal | ||
1 c. HealthMarket organic nonfat milk | ||
¼ c. vegetable oil | ||
2 HealthMarket organic eggs | ||
2 tsp. vanilla extract | ||
1 ½ c. peeled, finely chopped organic apples | ||
½ c. walnut pieces | ||
2 ½ c. flour | ||
¾ c. packed brown sugar | ||
2 ½ tsp. baking powder | ||
½ tsp. baking soda | ||
2 tsp. cinnamon |
Directions
- Preheat oven to 350 degrees. Stir together cereal, milk, oil, eggs and vanilla extract. Let stand 10 minutes. Stir in apples and walnuts.
- In a separate bowl, stir together flour, brown sugar, baking powder, baking soda and cinnamon.
- Add cereal mixture to flour mixture; stir until just moistened.
- Spoon evenly into greased muffin tins. Bake for 14 to 16 minutes or until toothpick inserted in the center comes out clean.
