4 c. uncooked Hy-Vee old-fashioned oats | ||
1 c. Hy-Vee flaked coconut | ||
¾ c. wheat germ | ||
1 (2 ounce) package Hy-Vee slivered almonds | ||
¼ c. Hy-Vee butter, melted | ||
¼ c. Hy-Vee honey | ||
½ tsp. almond extract | ||
1 (6 ounce) package Hy-Vee dried apricots, chopped | ||
Hy-Vee low-fat yogurt, fresh fruit or Hy-Vee skim milk, optional |
Directions
- In a large mixing bowl, stir together oats, coconut, wheat germ and almonds.
- Whisk together butter, honey and almond extract and stir into oat mixture. Spread evenly in a greased 13-by-9-inch baking pan.
- Bake at 300 degrees for 50 minutes to 1 hour, stirring well every 15 minutes, or until wheat germ is golden brown. Stir in chopped apricots, cool and store in an airtight container.
- If desired, serve granola with low-fat yogurt, fresh fruit or skim milk.
