1 (14 oz) can Hy-Vee reduced-sodium chicken broth | ||
1 (18 oz) jar Hy-Vee apricot preserves | ||
1 large onion, chopped | ||
2 tbsp. Hy-Vee Dijon-style mustard | ||
3 ½ lbs. boneless pork loin roast | ||
2 tbsp. cornstarch | ||
2 tbsp. cold water |
Directions
- Stir together broth, preserves, onion and mustard in a slow cooker. Add pork and turn to coat. Cover and cook on LOW 8 hours or until roast is tender.
- Remove roast from slow cooker.
- Mix cornstarch and water and stir in juices in slow cooker. Cover and cook on HIGH for 10 minutes or until mixture thickens and boils. Serve sauce with roast.
