Asparagus and Crab Salad

2 c. fresh asparagus, cut into bite-size pieces | ||
12 oz. imitation crab meat | ||
1 (5 oz) pkg organic lettuce mix | ||
1 c. cantaloupe, cut into 1/2–inch pieces | ||
1 c. thin-sliced seedless cucumber | ||
½ c. Asian sesame dressing |
Directions
- Microwave asparagus until tender-crisp. Drain and let cool.
- Cut crab into bite-size pieces.
- In a large bowl, combine asparagus and crab. Add lettuce mix, cantaloupe and cucumber. Toss gently.
- Pour salad dressing over all. Toss to coat. Serve immediately.
