2 lbs. fresh asparagus, trimmed
2 tbsp. lemon juice
½ tbsp. ground black pepper
4 tbsp. toasted breadcrumbs
3 tbsp. olive oil
2 tbsp. Dijon mustard
½ tsp. salt
6 small grape tomatoes, halved

Directions

  1. Steam asparagus spears until tender; drain and place on serving platter.
  2. In small jar with tight-fitting lid, shake together oil, lemon juice, mustard, salt and pepper.
  3. When ready to serve (warm or chilled), pour vinaigrette evenly over asparagus, sprinkle with breadcrumbs and garnish with sweet grape tomato halves.
