Bacon, Tomato and Avocado Sandwich

2 tsp. fresh lemon juice | ||

8 slice(s) Hy-Vee Bakery whole grain bread | ||
2 ripe beefsteak tomatoes, sliced | ||
8 slice(s) crisp-cooked turkey bacon | ||
1 avocado, pitted and sliced |
Directions
- In blender or food processor combine mayonnaise, basil leaves, lemon juice, salt and pepper. Blend until smooth; set aside.
- Toast bread slices. Spread basil mayonnaise onto bread while still warm.
- Top one slice of bread with sliced tomatoes, 2 strips bacon and avocado slices.
- Top with second slice of toasted bread and serve.
