    ½ c. red wine vinaigrette dressing, plus additional for serving
    1 c. cherry tomatoes, halved
    ½ c. red onion, thinly sliced
    ⅓ c. Cotija cheese, crumbled

    Directions

    1. Divide romaine among 4 serving bowls.

    2. Toss chuck roast and 1/2 cup vinaigrette dressing in medium bowl to coat. Spoon beef mixture on top of romaine.
