Beef Teriyaki Stir-Fry

This beef and veggie stir-fry gets an Asian-style kick from a three-ingredient sauce infused with apricot, teriyaki, and ginger.

¼ c. Hy-Vee teriyaki sauce | ||
2 tbsp. Smuckers apricot preserves | ||
¾ tsp. Tones ground ginger | ||
4 tsp. Crisco vegetable oil, divided | ||
1 (16 oz) pkg Hy-Vee frozen stir-fry vegetables with noodles |

Directions
- Trim fat from meat. Thinly slice meat across the grain into bite-size strips; set aside.
- Combine teriyaki sauce, apricot preserves and ginger in a small bowl. Set aside.
- Heat 2 teaspoons vegetable oil over medium-high heat in a large skillet. Add stir-fry vegetable mixture to skillet. Cook and stir for 2 to 4 minutes or until heated through. Remove vegetable mixture from skillet.
- Add 2 teaspoons oil to same skillet. Add beef strips; cook and stir about 5 minutes or until beef reaches desired doneness. Return vegetable mixture to skillet. Add teriyaki sauce mixture, tossing to coat. Heat mixture through.
