2 c. strawberries, rinsed, stemmed and then halved | ||

¼ c. plus 1 tbsp Hy-Vee orange juice, divided | ||
2 tbsp. Hy-Vee sugar | ||
2 tbsp. heavy whipping cream, whipped | ||
1 tsp. orange zest | ||
2 tbsp. Hy-Vee powdered sugar | ||
Additional orange zest, if desired | ||
Fresh mint, if desired |
Directions
- Combine strawberries, blueberries, blackberries,1/4 cup orange juice and sugar in bowl; cover and chill 30 minutes.
- In a medium bowl, fold together whipped cream, 1 teaspoon orange zest, 1 tablespoon orange juice and powdered sugar.
- Spoon berry mixture into each of 4 glass bowls; top each with 1 tablespoon whipped topping mixture. Garnish with orange zest and fresh mint, if desired.
