    1 tbsp. Hy-Vee paprika
    2 tsp. kosher salt
    2 tsp. Hy-Vee chili powder
    ½ tsp. Hy-Vee brown sugar
    ½ tsp. Hy-Vee ground black pepper
    ½ tsp. Hy-Vee garlic powder
    2 whole fresh catfish, about 2 to 3 pounds
    2 tsp. Hy-Vee canola oil

    • Meat thermometer

    Directions

    1. Preheat oven to broil on HIGH.
    2. In small bowl combine paprika, salt, chili powder, brown sugar, black pepper and garlic powder.
    3. Wash and pat catfish dry. Coat lightly with canola oil. Sprinkle with spice blend on both sides until coated.
    4. Line baking sheet with foil and spray with nonstick cooking spray. Broil fish about 12 minutes, turning carefully after 7 minutes, or until fish flakes easily (145 degrees). Allow fish to rest 2 minutes before serving.
