Description
Blintz pancakes are made with cottage cheese, yogurt, and potato starch, a variety of crepes. Try these for breakfast!

butter, sugar or fruit sauce, for serving |

Directions
- Beat eggs in a bowl.
- Add yogurt, cottage cheese, salt, sugar, potato starch, rice bran and brown rice flour. Mix well.
- Cook on a greased griddle.
- These are good plain or with butter. They may also be served with sugar or fruit sauces.
