Blue Cheese, Bacon and Apple Salad with Green Onion Vinaigrette

Description
The flavor triangle of smoky bacon, tangy blue cheese and slightly sweet apple creates captivating counterpoints in this simple salad.
Chef's Tip: Sprinkle a few dried cranberries on top for extra color and flavor. Shake the vinaigrette in a Mason jar for easy mixing. Makes it easy to refrigerate any leftovers too.

1 tsp. coarse ground mustard | ||
1 tsp. Hy-Vee honey | ||
¼ tsp. Hy-Vee salt | ||
3 green onions | ||
1 (6 oz) bag baby spinach | ||
2 celery, sliced thinly diagonally | ||
6 slice(s) Hy-Vee smoked, thick-sliced bacon, cooked, drained and crumbled | ||
1 tart red apple, cored and cut into chunks | ||
2 oz. crumbled blue cheese |
Directions
- Just before serving, add bacon, apple and blue cheese. Toss with dressing.
- For dressing, whisk together olive oil, vinegar, mustard, honey and salt. Thinly slice white portion of green onions and stir into dressing.
- Thinly slice green portion of green onion; set aside.
- In a large bowl toss baby spinach, reserved sliced green onion and celery.
