Blueberry Crunch Sundaes

1 (15 oz) can lite sliced pears, undrained, chopped | ||
1 (8 oz) can pineapple chunks, drained | ||
1 (16 oz) pkg Hy-Vee frozen blueberries, thawed, undrained | ||
1 tsp. Hy-Vee cinnamon | ||
1 tsp. almond extract | ||
2 tbsp. Minute tapioca | ||
4 c. Hy-Vee lite vanilla ice cream | ||
1 c. Hy-Vee honey oats and flakes cereal |
Directions
- In a large microwave-safe mixing bowl, combine pears, pear juice, pineapple, blueberries, cinnamon and almond extract. Microwave uncovered on HIGH for 2 minutes.
- Stir in tapioca. Microwave an additional 4 minutes, stirring once after 2 minutes.
- Remove blueberry mixture from microwave and allow to stand 5 minutes.
- In small serving bowls, place 1/2 cup ice cream. Top with 1/2 cup blueberry mixture and 2 tablespoons cereal.
