    1 tbsp. Hy-Vee vegetable oil
    5 Hy-Vee precooked breakfast sausage links, chopped
    1 c. Hy-Vee frozen potatoes O'Brien
    6 Hy-Vee large eggs, beaten
    ½ c. Hy-Vee shredded cheddar cheese

    Directions

    1. In a large non-stick skillet, heat vegetable oil over medium heat. Add chopped sausage links and frozen potatoes. Cook for 5 minutes or until browned.
    2. Add eggs and continue to cook, lifting egg mixture so the uncooked portion flows underneath, until almost set, about 2 to 3 minutes.
    3. Reduce heat to low, cover and top with cheese. Cook 2 additional minutes or until cheese is melted.
