Broccoli Salad with Flax

Serves 6

6 c. chopped broccoli | ||
¼ c. finely chopped red onion | ||
¾ c. raisins or sweetened dried cranberries | ||
½ c. pumpkin seeds or sunflower seeds or chopped walnuts or chopped nuts of your choice | ||
2 tbsp. flax seed | ||
¾ c. light mayonnaise | ||
2 tbsp. raspberry vinegar | ||
2 tbsp. sugar |
Directions
- Place broccoli, onion, raisins, pumpkin seeds and flax seed in a large bowl.
- In a separate bowl, combine mayonnaise, raspberry vinegar and sugar. Mix well.
- Pour dressing over salad and toss well.
- Chill before serving. Store any leftovers in the refrigerator.
