Directions
Place oven rack 6 in. from heat. Preheat broiler to HIGH.
Spray a large rimmed baking pan with nonstick spray. Place salmon, skin side down, in prepared baking pan. Sprinkle shallot evenly on top of salmon. Top with 1/3 cup dill and butter slices; drizzle with lemon juice and wine. Sprinkle evenly with blue cheese. For garnish, arrange lemon slices in baking pan around salmon.
Broil salmon for 10 to 12 minutes or until cheese is golden brown and salmon flakes easily with fork (145 degrees). Loosely cover with foil and let rest for 3 to 5 minutes.
To serve, cut salmon and place on serving plates. Garnish with additional fresh dill and broiled lemon slices, if desired.
