4 (4 oz each) salmon fillets | ||
½ tsp. Hy-Vee sea salt | ||
¼ tsp. freshly cracked Hy-Vee black pepper | ||
1 tsp. Hy-Vee chili powder | ||
1 (8 oz) can That's Smart pineapple tidbits, drained | ||
1 jalapeno, seeded and diced | ||
3 tbsp. chopped green onion | ||
¼ c. chopped red bell pepper | ||
1 tsp. packed Hy-Vee brown sugar | ||
1 tbsp. fresh lemon juice |
Directions
- Place salmon fillets skin-side-down on a greased broiler pan.
- In a small bowl, combine salt, black pepper and chili powder. Sprinkle evenly over salmon fillets.
- Broil 6 to 8 minutes or until salmon flakes easily with a fork.
- Meanwhile, combine pineapple, jalapeno, onion, bell pepper, brown sugar and lemon juice.
- Serve salmon topped with pineapple mixture.
