4 boneless, skinless chicken breasts | ||
Kosher salt and fresh cracked Hy-Vee black pepper, to taste | ||
1 tbsp. Hy-Vee Select olive oil | ||
4 medium tomatoes, diced | ||
3 tbsp. minced red onion | ||
2 clove(s) garlic, minced | ||
6 to 8 basil leaves, roughly chopped | ||
4 (1/2-inch thick) slices fresh mozzarella | ||
4 tbsp. Hy-Vee finely shredded Parmesan cheese |
Directions
- Preheat oven to 350 degrees.
- Heat a large oven-proof saute pan over high heat. Season both sides of chicken with salt and pepper. Sear the chicken in the olive oil over high heat for 2 minutes. Flip chicken and place the entire pan in the oven and bake for 20 minutes.
- Meanwhile, in a medium bowl combine tomatoes, red onion, garlic and basil. Season with salt and pepper to taste and mix well.
- Remove chicken from oven, top with the tomato mixture and one piece of mozzarella cheese per breast. Bake an additional 3 to 4 minutes or until the cheese is lightly melted. Remove from oven and immediately top with Parmesan.
