Bulgar and Flax Pilaf

2 tbsp. butter or margarine | ||
1 c. bulgar wheat | ||
¼ c. flax seed | ||
⅓ c. minced onion | ||
1 small tomato, diced | ||
2 c. chicken broth | ||
½ tsp. salt | ||
¼ tsp. crushed rosemary OR 1 tsp fresh chopped rosemary or herb of your choice |
Directions
- In a medium saucepan, melt butter over medium heat. Add bulgar wheat, flax seed and onion. Stir until bulgar is golden brown and flax is turning dark, about 3 minutes.
- Stir in tomato, chicken broth, salt and rosemary. Cover pan and heat to boiling. Reduce heat and simmer 15 minutes.
- Turn off heat, remove lid and fluff pilaf with a fork.
- Let rest 10 minutes before serving.
