Caramel-Filled Chocolate Sugar Cookies

1 c. Hy-Vee butter, softened | ||
1 c. Hy-Vee granulated sugar | ||
1 tsp. Hy-Vee vanilla | ||
1 Hy-Vee large egg | ||
2 c. Hy-Vee flour | ||
⅓ c. Hy-Vee baking cocoa | ||
½ tsp. Hy-Vee baking soda | ||
1 (13 oz) pkg Rolo candy, unwrapped | ||
½ c. Hy-Vee powdered sugar |
Directions
- Preheat oven to 350 degrees.
- With an electric mixer, beat butter, sugar and vanilla at medium speed until light and fluffy. Add egg.
- In a medium bowl, stir together flour, cocoa and baking soda. Add flour mixture to butter mixture and mix at low speed until blended.
- For each cookie, use 1 tablespoon dough to encase one Hershey's Rolo™ completely.
- Place on an ungreased cookie sheet.
- Bake 8 to 10 minutes.
- Remove cookies from baking sheet and cool on wire rack.
- Dust with powdered sugar.
