    4 whole graham cracker squares
    ½ medium banana
    2 tbsp. brown sugar
    2 tbsp. cornstarch
    1 ½ c. vanilla soymilk
    ¼ c. fat-free caramel topping
    1 tsp. vanilla

    Directions

    1. Break each graham cracker square into 4 pieces and cut banana into small chunks. Put them into a medium serving bowl or divide among 4 small serving dishes.
    2. Combine the brown sugar and cornstarch in a medium saucepan.
    3. Stir in the soymilk and caramel topping.
    4. Cook, stirring, over moderate heat until pudding just comes to a boil and thickens.
    5. Remove from heat and stir in vanilla. Pour the pudding over the graham crackers and bananas.
    6. Cover and refrigerate. Garnish with whipped topping or caramel sauce.
