You'll be in for a surprise when you try this unsuspectingly delicious combo: orange slices simmered in a cinnamon caramel sauce spooned over Greek yogurt.

5 medium mandarin oranges
2 tbsp. Hy-Vee butter
½ c. packed Hy-Vee brown sugar
¼ tsp. Hy-Vee ground cinnamon
2 c. Hy-Vee vanilla Greek yogurt (18 oz)
Fresh mint leaves, to garnish

    Directions

    1. Cut one orange in half. Squeeze juice from orange, yielding about 2 tablespoons juice. Set aside. Peel remaining oranges; cut each crosswise into 4 (1/4-inch thick) slices.
    2. In a medium skillet, melt butter over medium heat. Stir in 2 tablespoons orange juice, brown sugar and cinnamon. Continue cooking until brown sugar dissolves. Add orange slices and cook 2 minutes more, spooning caramel mixture over orange slices.
    3. To serve, place orange slices over yogurt, generously spooning with warm caramel sauce. If desired, garnish with mint leaves.
