¼ c. fresh mango, diced and peeled | ||
¼ c. tomato, diced | ||

1 tbsp. Hy-Vee Select red wine vinegar | ||
2 tsp. Hy-Vee Select extra-virgin olive oil |

Directions
- Prepare a charcoal or gas grill for direct grilling over medium heat.
- For the pork chops, combine coriander, cumin, sugar, ginger, salt and pepper flakes. Rub over both sides of pork chops.
- Grill pork chops 14 to 16 minutes, turning once halfway through cooking, or until internal temperature reaches 145 degrees.
Meanwhile, for the salsa, combine, mango, tomato, cilantro, red onion, vinegar and olive oil. Serve salsa with pork chops.
