2 c. Hy-Vee finely shredded mild Cheddar cheese, divided
¼ c. chopped green onions
2 tbsp. Hy-Vee sour cream
1 (0.9-oz.) package Hidden Valley creamy dill ranch dip mix
1 bunch Italian parsley, trimmed; for garnish
Culinary Tours sweet soppressata, folded into flowers; for garnish
Assorted veggie dippers, for serving
Assorted crackers and crisps, for serving

  • 18x12-in. piece of plastic wrap
  • Serving board or tray

Directions

  1. Beat cream cheese, 1 cup shredded cheese, green onions, sour cream and dip mix in a medium bowl with an electric mixer until combined.

  2. Transfer cheese mixture to an 18x12-in. piece of plastic wrap. Use the plastic wrap to form mixture into a carrot shape. Bring up sides of plastic wrap to cover carrot-shaped cheese ball; refrigerate at least 1 hour or until firm.

  3. To serve, remove plastic wrap and transfer cheese ball to a serving board or tray. Press remaining 1 cup cheese on top and sides of carrot cheese ball. Slightly push parsley in top of carrot cheese ball to resemble carrot greens. Garnish with soppressata flowers. Serve with assorted dippers, crackers and/or crisps.
