Directions
Transfer cheese mixture to an 18x12-in. piece of plastic wrap. Use the plastic wrap to form mixture into a carrot shape. Bring up sides of plastic wrap to cover carrot-shaped cheese ball; refrigerate at least 1 hour or until firm.
To serve, remove plastic wrap and transfer cheese ball to a serving board or tray. Press remaining 1 cup cheese on top and sides of carrot cheese ball. Slightly push parsley in top of carrot cheese ball to resemble carrot greens. Garnish with soppressata flowers. Serve with assorted dippers, crackers and/or crisps.
