    2 tbsp. margarine
    ½ c. grated Parmesan cheese
    ¼ c. cornmeal
    ¼ c. flour
    ½ tsp. black pepper
    1 tsp. paprika
    2 lbs. catfish fillets

    Directions

    1. Preheat the oven to 400 degrees.
    2. Place margarine in a 13-by-9-inch baking pan. Place pan in the oven while oven is heating to melt margarine.
    3. Remove pan from the oven.
    4. Mix Parmesan cheese, cornmeal, flour, pepper and paprika in a plastic bag.
    5. Add catfish fillets to bag, 1 at a time, shaking to coat with the Parmesan mixture.
    6. Arrange fillets in a single layer in the prepared pan, turning once to coat with margarine.
    7. Sprinkle any remaining cheese mixture over fish.
    8. Bake for 10 to 15 minutes or until golden brown and fish flakes easily when tested with a fork.
