Cheesy Chicken Quesadillas

4 leftover chicken kabobs (from Spicy Tequila Lime Chicken Kabobs recipe) | ||
¼ c. Hy-Vee vegetable oil, divided | ||
8 (8-inch) Hy-Vee flour tortillas | ||
1 c. Hy-Vee shredded 3-cheese Mexican blend cheese, divided | ||
1 (2.25 oz) can Hy-Vee sliced ripe olives, drained, divided |
Directions
- Remove chicken and vegetables from wooden skewers. Chop chicken and vegetables into 1/2-inch pieces. Set aside.
- Heat 1 tablespoon vegetable oil in skillet over medium heat. Place tortilla on hot skillet.
- Place 1/2 cup chicken and vegetable mixture, 1/4 cup cheese and 2 tablespoons olives on each tortilla. Top with another tortilla.
- Flip quesadilla over when bottom tortilla is golden, about 3 to 5 minutes. Cook another 3 to 5 minutes and remove from skillet.
- Repeat with remaining ingredients.
- Cut each tortilla to quarters. Serve warm.
