Cheesy Crab-Stuffed Mushrooms

It's a party favorite, but that doesn't mean you can't whip up stuffed mushrooms for just you and the family to enjoy.

12 large button mushrooms | ||
4 oz. Hy-Vee cream cheese, at room temperature | ||
6 oz. fresh Alaska king crabmeat, roughly chopped | ||
2 green onions, sliced | ||
½ tsp. Hy-Vee garlic salt | ||
Squeeze of fresh lemon | ||
⅓ c. Hy-Vee butter, melted | ||
1 c. Hy-Vee shredded Colby Jack cheese |
Directions
- Preheat oven to 350 degrees. Remove stems from mushrooms. Hollow out cap with spoon if needed. Place in muffin tins, one cap per cup.
- In a medium bowl, combine softened cream cheese, crabmeat, green onions, garlic salt and lemon juice. Place a heaping spoonful of filling in each mushroom cap. Pour butter over caps and top with cheese.
- Bake for 30 minutes or until cheese is melted and heated through.
