1 (2 pound) bag frozen Hy-Vee Southern-style hash browns
1 (10.75 oz) can condensed cheddar cheese soup
½ c. Hy-Vee unsalted butter, melted
½ c. diced onion
¼ c. diced red bell pepper
¼ c. diced green bell pepper
Hy-Vee salt and black pepper to taste

Directions

  1. Preheat oven to 350 degrees.
  2. In a large bowl, stir hash browns, soup and butter. Stir in onion and bell peppers. Pour into a greased 9-by-13-inch baking dish.
  3. Bake covered, 30 minutes; remove cover and bake additional 30 to 40 minutes.
  4. Season with salt and black pepper to taste.
