Cheesy Potato Puff Casserole

1 c. Bisquick | ||
2 c. Hy-Vee skim milk | ||
4 Hy-Vee large eggs | ||
¼ tsp. Hy-Vee black pepper | ||
1 lbs. Hy-Vee bacon, cooked and crumbled | ||
6 c. Hy-Vee frozen potato puffs | ||
1 c. Hy-Vee shredded cheddar cheese | ||
1 tbsp. sliced green onions |
Directions
- Preheat oven to 400 degrees. Coat a 9-by-13-inch baking dish with nonstick cooking spray.
- In a bowl, stir together Bisquick, milk, eggs and black pepper until thoroughly mixed. Pour mixture into baking dish and sprinkle with half the cooked bacon. Place potato puffs on a cookie sheet.
- Bake both the egg mixture and potato puffs for 20 minutes. Remove both from oven.
- Place potato puffs on top of egg mixture in baking dish; sprinkle with cheese and remaining bacon. Return casserole to the oven and bake for 15 minutes or until cheese melts. Remove casserole from oven and sprinkle with green onions.
