¾ c. sesame oil | ||
1 tbsp. fresh grated ginger | ||
1 clove(s) garlic, minced | ||
1 to 2 tsp wasabi paste | ||
2 tbsp. soy sauce | ||
1 (12 oz) pkg edamame, cooked and cooled | ||
6 crimini mushrooms, sliced, cooked and cooled | ||
1 red bell pepper, roasted, seeded and chopped | ||
2 green onions, chopped on the bias | ||
4 stalks bok choy, chopped | ||
2 tbsp. chopped fresh cilantro |
Directions
- In a large bowl mix sesame oil, ginger and garlic. Blend in wasabi paste (adding as much wasabi as you prefer); continue whisking and slowly add soy sauce.
- Add edamame, mushrooms, pepper, onion, bok choy and cilantro to the dressing. Season to taste.
