Cherry Cream Cheese Coffeecake

3 oz. Hy-Vee cream cheese | ||
3 tbsp. Hy-Vee butter | ||
2 c. Hy-Vee baking mix | ||
¾ c. plus 2 tbsp Hy-Vee skim milk, divided | ||
½ c. Hy-Vee cherry preserves | ||
1 c. Hy-Vee powdered sugar | ||
1 tsp. Hy-Vee vanilla |
Directions
- Preheat oven to 425 degrees. Spray an 8-by-8-inch baking pan with nonstick cooking spray.
- Cut cream cheese and butter into baking mix until crumbly.
- Stir in 3/4 cup milk. Press half of the mixture into prepared pan.
- Spoon preserves over mixture in pan. Drop remaining batter by teaspoonfuls over top.
- Bake 13 to 15 minutes or until a toothpick inserted into center comes out clean.
- In a small bowl, combine powdered sugar, vanilla and 1 to 2 tablepsoon milk. Drizzle evenly over top of warm coffeecake before serving.
