Chicken and Peach Spinach Salad

1 (10 oz) pkg fully-cooked chicken breast strips | ||
3 peaches, pitted and sliced | ||
3 plums, pitted and sliced | ||
½ c. diced red onion | ||
2 tsp. Hy-Vee Select olive oil | ||
2 tbsp. Hy-Vee Select white wine vinegar | ||
2 tbsp. Hy-Vee Dijon mustard | ||
2 tsp. Hy-Vee honey |
Directions
- In a large bowl, combine spinach, chicken, peaches, plums and red onion. Set aside.
- In a jar with a tight fitting lid, combine olive oil, vinegar, mustard and honey. Screw lid on jar and shake to blend.
- Drizzle dressing evenly over salad before serving.
