1 (5-oz.) container organic power greens
1 c. cherry tomatoes, halved
¼ c. fennel, thinly sliced, plus fronds for garnish
12 oz. Hy-Vee rotisserie chicken breast, thinly sliced
12 oz. Hy-Vee Select white balsamic honey vinaigrette
Hy-Vee ground black pepper

Directions

  1. Microwave potatoes according to package directions. Cool 5 minutes; cut potatoes in half. Toss together potatoes, greens, cherry tomatoes, and fennel; arrange on dinner plates. Top with chicken slices. Heat balsamic vinaigrette until warm. Serve on salads. Garnish with chopped fennel fronds and sprinkle with pepper, if desired.
