    2 c. cubed uncooked skinless, boneless chicken breast
    1 (12 oz) pkg Hy-Vee European Blend salad mix
    1 medium tomato, seeded, chopped
    ¼ c. Hy-Vee shredded Parmesan cheese
    1 c. Caesar croutons
    ¾ c. fat-free Caesar salad dressing

    Directions

    1. In a medium skillet, cook chicken over medium heat for 5 minutes or until no longer pink.
    2. Allow to cool for 1 to 2 minutes.
    3. In a large mixing bowl, stir together chicken, salad mix, tomato, cheese, croutons and dressing. Serve.
    4. Refrigerate remaining salad.
