Chicken Caesar Salad

2 c. cubed uncooked skinless, boneless chicken breast | ||
1 (12 oz) pkg Hy-Vee European Blend salad mix | ||
1 medium tomato, seeded, chopped | ||
¼ c. Hy-Vee shredded Parmesan cheese | ||
1 c. Caesar croutons | ||
¾ c. fat-free Caesar salad dressing |
Directions
- In a medium skillet, cook chicken over medium heat for 5 minutes or until no longer pink.
- Allow to cool for 1 to 2 minutes.
- In a large mixing bowl, stir together chicken, salad mix, tomato, cheese, croutons and dressing. Serve.
- Refrigerate remaining salad.
