Description
Fresh herbs, we love you. But we wish you lasted longer. If you can relate, try using fresh herb paste in place of herbs. You can use 1 tablespoon of Fresh Basil Paste, for example, in place of 1 tablespoon of fresh basil. The paste comes in a tube and lasts for weeks in the fridge.

2 clove(s) garlic, minced | ||
1 medium sweet potato, peeled and cubed | ||
1 (28 oz) can Hy-Vee crushed tomatoes | ||
1 (15 oz) can Hy-Vee cannellini beans, rinsed and drained | ||
3 c. Hy-Vee 33%-less-sodium chicken broth | ||
1 c. chopped cooked chicken | ||
⅓ c. quick-cooking barley | ||
1 tbsp. chopped fresh oregano or 1 tsp Hy-Vee dried oregano | ||
1 tbsp. chopped fresh basil or 1 tsp Hy-Vee dried basil | ||
Hy-Vee salt and Hy-Vee ground black pepper, to taste | ||
Fresh basil leaves, optional |
Directions
- In a large saucepan, heat oil over medium heat. Add onion, celery and garlic. Cook until onion is tender, about 3 minutes. Add sweet potato and continue to cook for 2 minutes. Add tomatoes, beans, broth, chicken, barley, oregano and basil; cover and simmer for 15 minutes. Season to taste with salt and pepper. Garnish with basil leaves.
