½ c. Hy-Vee butter, divided | ||
3 tbsp. Hy-Vee minced onion | ||
1 small green pepper, chopped (about 1/2 cup) | ||
¾ c. instant rice, prepared according to package directions | ||
1 tsp. Hy-Vee parsley flakes | ||
½ tsp. sage | ||
⅛ tsp. Hy-Vee pepper | ||
1 (3 lb) broiler chicken |
Directions
- In skillet over medium heat, melt 6 tablespoons butter. Add onion and green pepper; cook until green pepper is tender. Stir in rice, parsley flakes, sage and pepper; set aside.
- Remove giblets from chicken; rinse chicken.
- Place chicken in baking dish. Stuff chicken with rice mixture; rub remaining 2 tablespoons butter on chicken.
- Bake 2 hours. Baste occasionally with additional butter or drippings from pan.
