Description

Russets are the best for cooking on the grill. They're golden and crispy on the outside and soft and fluffy on the inside. Serve these spicy wedges with ranch dressing.

1 lbs. russet potatoes
2 tbsp. Hy-Vee butter, melted
1 tbsp. Hy-Vee Select olive oil
2 cloves garlic, minced
1 tsp. chipotle powder
1 tsp. lime zest
1 ½ tsp. kosher salt

Directions

  1. Preheat grill for direct cooking to medium heat.
  2. Scrub potatoes thoroughly with a brush; pat dry. Cut potatoes lengthwise into wedges. In a medium bowl, combine butter, olive oil, garlic, chipotle powder, lime zest and salt; toss potatoes in chipotle-butter mixture.
  3. Line grill rack with a piece of foil sprayed with non-stick cooking spray. Using a fork, prick foil in several places. Place potato fries on foil. Grill for 40 minutes or until tender, turning occasionally.
